PICK WITH CARE

Be sure to use only dandelions that have not been sprayed with pesticides or any other chemicals! This is very important, as you obviously don’t want these chemicals in your jelly. Picking dandelions on public property is generally not a good idea, as many towns and cities use pesticides and weed killers in parks and other public areas. Your best bet is to pick dandelions from your own property or a friend’s, assuming neither of you uses chemicals on your lawn.

APPLE-SAGE JELLY

This jelly is quick and convenient to make at any time of year, as it relies on dried rather than fresh herbs. It has a slightly looser set than some jellies, which makes it an ideal glaze for meats. The assertive flavor of the sage complements roast turkey or pork especially well.
